On Monday, January 4th we lost our good friend and a true legend, Connie Kellie.  We've been honoring her all week with memorial shows and podcasts and with a fantastic memorial page made by our web guru, Wendy.

But, after a suggestion by Click of Six member, Tina, we thought of another way to share Connie's memory.  And that way was with some of her favorite recipes.  Because, if you are an avid listener of the show, you'll know that we loved talking about food.  So, without further adieu, here are some of Connie's favorite recipes.


Connie's Meat Dip Recipe

Ingredients

  • 1 1/2 lbs. of hamburger meat
  • 1 onion
  • 3/4 cup of ketchup
  • 3 heaping tablespoons chili powder
  • Shredded cheese (to desired consistency)

Recipe

  1. Dice the onion
  2. Brown the hamburger meat with the diced onion
  3. Put all the ingredients in the crockpot on LOW
  4. Cook until cheese is melted and the dip consistency is to your liking
  5. Enjoy with Scoops

Connie's Favorite Rib Recipe

This recipe was given to us over the phone from Click of Six member, Katie.

Here is the recipe:

1 - Season your ribs with salt, pepper and any other spice or dry rub you enjoy

2 - Grill the ribs for 10 minutes on each side

3 - Put the ribs in a disposable pan and put a sliced onion on top of the ribs

4 - Bathe the ribs in your favorite beer (I suggest Founders KBS if you are willing to spare a bottle)

5 - Bake the ribs at 350 degrees (covered) for 3 hours

6 - Pull the ribs out and brush on a sauce of your choosing

7 - Throw those bad boys back in the oven for 30 more minutes (covered or uncovered are both fine, it depends how you like your sauce)

8 - Serve and NOM NOM NOM those tasty ribs!

Connie was so enamored with the recipe that she was taking notes while Katie was on the phone!
